Healthy Men & Women, Ages 18 to 45, Needed for Beef Selenium Study
 

 
Why are we doing this study?
 

Beef is the primary source of selenium in North America. Dietary intake of selenium decreases the risk of colon cancer, whereas red meat consumption may increase the risk. Previous studies in animals have demonstrated that selenium from beef is in a form that is exceptionally easy to absorb and well utilized.

 
Who is eligible for this study?
 
• Healthy men and women between the ages of 18 and 45
• Do not regularly take medications other than birth control pills for women
• Nonsmokers
• Not involved in extreme exercise programs
 
What is required of me for this study?
 

You will eat meals and drink beverages provided by the Center. During the study period of 15 weeks, you can not eat or drink any other food or beverage. Most of the food ingredients come from a local grocery store. The diet will contain adequate amounts of all nutrients and will be provided to you in a three day menu rotation.

You will be expected to come to the Center every week day, except holidays, for breakfast. This means you will be limited in the distance you can go from the Center during the week. You could leave the area after eating your breakfast on Friday, as long as you were back for Monday breakfast. If you leave, you will be expected to take your food with you and make arrangements for refrigeration and cooking.

On day 63, you will be served either rabbit meat or yeast for breakfast. A stable isotope of selenium will be used to follow the metabolism of selenium in the rabbit meat or the yeast. We will measure selenium status and antioxidant status on collected blood, saliva, urine and feces samples.

For your participation, you could earn up to $2240.

 
WHAT WILL I BE EATING FOR THIS STUDY?
 
You will have a three day menu rotation.

Day 1:
Breakfast: Orange Juice; 2% Milk; Corn Chex/Sugar; Pears
Lunch: Apple Juice; Beef Taco Salad; Tostado Chips; Taco Sauce; French Dressing; Lemon Pie
Dinner: Strawberry Kiwi Kool-Aid; Beef Patty; Potatoes/Gravy; Lentil Soup; Mandarin Oranges; Chocolate Candy Bar
Snack: Apple Juice; Town House Crackers; Peanut Butter

Day 2:
Breakfast: Orange Juice; 2% Milk; Corn Flakes/Sugar; Peaches
Lunch: Cherry Kool-Aid; Beef Chili; Lettuce; Ranch Dressing; Town House Crackers; Strawberry Cheesecake
Dinner: Iced Tea; Beef & Noodles; Carrot & Raisin Salad; Chocolate Pie
Snack: Grape Kool-Aid; Fritos

Day 3:
Breakfast: Orange Juice; 2% Milk; Kix/Sugar; Peaches
Lunch: Grape Kool-Aid; Beef Patty; Hash Browns/Margarine; Ketchup; Peas; Sugar Cookies; Vanilla Frosting
Dinner: Strawberry Kiwi Kool-Aid; Beef Enchilada; Sour Cream; Orange Jell- O/Pineapple; Cool Whip; Chocolate Candy Bar
Snack: Iced Tea; Chex; Pretzels; Peanuts

Optional Items:
Salt and pepper (amount will be set); Limit of 2 cups of coffee/day; No limit on extra peppermint and spearmint gum; Limit of 2 cans Diet Soda/day (choose from 7-up, Mountain Dew, Coke)
