Abstract:
Lesquerella Fendeleri is a desert shrub native to the American Southwest and a member of the
Curciferae (cabbage, mustard) family. The invention relates to a method of extracting polysaccharide
products from L. Fendeleri and to the polysaccharide products extracted from the seed meal of
L. Fendeleri. Lesquerella gums and gels are unique in that they are extracted from oilseed or oilseed
cake; thus utilizing the waste products of oil production and adding to the economic incentive of
utilizing Lesquerella as a cash crop. According to the invention, high quality polysaccharide gums and
gels can be tailored to select between degree of product recovered and viscosity enhancing properties of
the polysaccharide product.
