5 A Day: Eat 5 to 9 Fruits and Vegetables

Citrus Salad


Makes 4 servings
Each serving equals two 5 A Day servings

Ingredients

1 medium pink grapefruit, peeled and cut into pieces
2 large oranges, peeled and cut into pieces
2 tangerines, peeled and cut into pieces
1 cup watercress leaves, rinsed and dried
1 large head of Bibb lettuce, separated into leaves, rinsed and dried
Peel from 1 orange, cut into very fine julienne strips
3 Tbsp orange juice
1 Tbsp balsamic vinegar
¼ tsp salt
1 Tbsp canola oil

In a medium bowl, combine grapefruit, oranges, tangerines, and watercress. In a small bowl, combine the orange juice, balsamic vinegar, and salt. Add the oil, whisk the dressing until it is combined. Pour over fruit and watercress and gently toss to combine. Line four serving plates with the Bibb lettuce. Divide the fruit mixture among the plates and garnish with the julienne peel.
