Q: What guidance does FDA have for manufacturers of Olives?

A: Pitted and stuffed olives containing more than an unavoidable minimum of pits or pit fragments are regarded to be in violation of the Federal Food, Drug, and Cosmetic Act. While it may not be possible to completely eliminate this problem, dealers have been put on notice that they must take steps to reduce it to the extent that is reasonably feasible (see Food Defect Action Levels).
