1 package (32 oz.) frozen posole
2-1/2 quarts water or more
2 large onions, thinly sliced
4 whole garlic cloves, crushed
1 can (28 oz.) crushed tomatoes
1 lb. lean pork or beef
2 Tbsp. dried red chili
1 Tbsp. dried oregano

- Cook posole in water in crock pot for several hours until corn
pops.
- Add remaining ingredients and allow to simmer slowly until
meat is tender.
- During cooking, continue to add more water to stew, if
necessary and stir occasionally.
- Makes 8 servings.
