Research Project: Rheological and Interfacial Properties of Bio-Based Materials and Food Products

Location: Cereal Products and Food Science Research

Project Number: 3620-44000-046-00
Project Type: Appropriated

Start Date: Feb 21, 2002
End Date: Aug 31, 2005

Objective:
Characterize rheological flow behavior of bio-based complex fluids of potential commercial import to ARS including Oatrim, Nutrim, Z-trim, and Fantesk. Evaluate and develop suitable constitutive models, utilize models to optimize processing methods. Characterize interfacial properties of biobased mixtures of interest in food and non-food applications as function of component chemical/physical properties & processing parameters. Develop models for predicting properties to optimize bioproducts of interst to ARS.

Approach:
Characterize under shear flow materials of interest to ARS: Oatrim, Nutrim, Z-trim, and Fantesk using the resources of NCAUR rheology research lab. Investigate temperature, applied shear rate, concentration, and applied pressure. Develop predictive constitutive models that will be validated over appropriate shear rate, temp, and concentration range as required by applications by predicting transient response of the material. Utilize the models to solve problems of practical import. Investigate surface & interfacial energies of mixtures comprising biobased ingredients of interest in ARS commercial products. Characterize binary and ternary mixtures; study both miscible and immiscible mixtures. Direct and indirect interfacial characterization methods will be employed. End-use properties such as friction under boundary and hydrodynamic regimes will be evaluated. The data will be used to develop interfacial and end-use property predictive models. If answers to some of the research questions cannot be obtained using materials of interest, model systems will be prepared and studied.
