Objective:
Cooperative research project is to evaluate potato clones with high anthocyanin pigment for their antioxidant properties, total phenolics content, and total anthocyanin content. The correlation of these three parameters will be studied.

Approach:
Potato clones with high pigment levels will be extracted and separated into aqueous and organic phase fractions. Oxidative Radical Obsorbance Capacity (ORAC), total phenolics, total anthocyanin, and total carotenoid will be measured using the appropriate analyses. Statistical analysis will be used to determine correlation. An attempt will be made to establish which fraction is more significant in providing antioxidant activity by use of correlation statistics. The range of genetic variation for content of various classes of compounds and antioxidant potential will be determined. Parents for future breeding efforts will be determined. Parameters will be developed to guide selection of potato clones for use by the potato chip industry to develop high antioxidant potato chips. Documents SCA with Oregon State University.
