Objective:
Characterize Peruvian potato varieties for pigment content and antioxidant capacity.

Approach:
Tubers grown in the field will be analyzed for anthocyanin and carotenoid concentrations by extracting hydrophilic and lipophilic fractions. Extracts will be measured for Oxygen Radical Absorbance Capacity. Fractions will be separated on high performance liquid chromatography to identify phenolics, anthocyanins and carotenoids.
