Objective:
Compare the volatile composition of thornless advanced blackberry selections with 'Marion', Evergreen and other potentially economically important cultivars. Identify key aroma-active compounds in those thornless advanced blackberry selections. Quantitative comparison of aroma compounds of the thornless advanced selections with 'Marion' and Evergreen. Correlate sensory data with instrumental analysis.

Approach:
The volitile composition will be analyzed with GC-FID. The compounds will be identified with GC-MS and GC-IR. Flavor compund in the advanced selections will be analyzed using the same techniques employed for 'Marion' flavor analysis. After the important aroma compunds are identified, rapid analytical methods will be developed to quantify those aroma compounds in blackberries. Documents SCA with OR State U.
