Objective:
Identify and quantify levels of bioactive phytonutrients in economically important crops specific to the Mid-South region and determine the effect of maturation on phytonutrient content. Identify optimal postharvest handling and storage parameters that retain or elevate levels of phytonutrients and antioxidant capacity in targeted crops. Develop laboratory and pilot scale methods for extracting, concentrating, and stabilizing bioactive phytonutrients in the targeted.

Approach:
The effects of maturity on the levels of phenolic compounds in blueberries and grapes, and lycopene in watermelon, will be determined using spectrophotometric and HPLC methods. The effects of postharvest handling, uvb irradiation, and storage on the quantity and quality of the above compounds will be determined. Methods to extract and stabilize lycopene from watermelon will be developed.
