Ready to Eat Meat & Poultry Results
FSIS has conducted regulatory microbiological testing programs on selected meat, poultry, and egg products since 1983. Products sampled and the microbial hazards for which they are analyzed are those of public health concern. This page includes a description of Listeria and Salmonella test results, and links to data tables.
Baseline Data
Data was obtained to estimate the prevalence and levels of bacteria on a sample of inspected
carcasses. Studies focus on bacteria of concern to public health.
