FSIS undertook two quantitative microbial risk assessments to assist FSIS risk managers in evaluating egg handling and pasteurization performance standards for reducing the likelihood of Salmonella enterica serovar Enteritidis (SE) contamination in shell eggs and Salmonella spp. contamination in egg products. This risk assessment was initiated in February 2002 in response to public comments on the Food Safety and Inspection Service (FSIS) proposed rule: Performance Standards for the Production of Processed Meat and Poultry Products: 66 FR 12589.
Quantitative Assessment of the Relative Risk to Public Health from Foodborne Listeria monocytogenes Among Selected Categories of Ready-to-Eat Foods (Sep 2003)
(FDA, FSIS, CDC) The purpose of the assessment is to examine systematically the available scientific data and information to estimate the relative risks of serious illness and death associated with consumption of different types of Ready-to-Eat (RTE) foods that may be contaminated with Listeria monocytogenes.

Salmonella Enteritidis Risk Assessment, Shell Eggs & Egg Products (Jun 12, 1998)
FSIS began a comprehensive risk assessment of Salmonella enterica serotype Enteritidis (Salmonella Enteritidis) in December 1996 in response to an increasing number of human illnesses associated with the consumption of shell eggs. This is the final report.
