Commodity Recipe Exchange

The
Commodity Recipe Exchange is an interactive resource for schools and
institutions participating in the National School Lunch Program (NSLP), the Child and Adult Food Program
(CACFP), the Summer Food
Service Program (SFSP), and the Nutrition Services Incentive Program
(NSIP). It's also a resource for those individuals and households
participating in the Commodity Supplemental Food Programs (CSFP),
the Food Distribution Program on Indian Reservations (FDPIR), and
the The Emergency Food Assistance Program (TEFAP)

This Commodity
Recipe Exchange is an interactive resource for school food service personnel to find new
and different ways to prepare commodities and other foods. It is also a place for schools
to share creative and innovative recipes that have been well-received by their students. Some recipes are ideal for new or hard-to-use
commodities, while others introduce regional tastes and new creations for familiar foods
to schools across the country. Every recipe contains at least one USDA commodity offered
to States for schools and institutions participating in USDA's food assistance programs.
For your convenience,
the recipes for schools and
institutions are arranged by the Food Group Categories
in accordance with the Food Guide Pyramid (i.e., Meats and
Meat Alternates, Fruits/Vegetables/Nuts/Grains, Dairy,
etc.). At the bottom of each recipe, you will find a link to
the commodity fact sheet database that provides additional Facts About USDA
Commodities for Schools and Institutions. When possible,
recipes will be geared toward commodities currently
available.
Schools
Recipes are posted on the Food Distribution Program's
website at:
www.fns.usda.gov/fdd/recipes/schrecipes.htm.
For easy cross-referencing, you will be able to access the
school recipes by following categories:
- Menu Category (i.e., Desserts, Entrees, Breads, Casseroles,
Soups and Salads, Vegetables); and
- Food Group (i.e., Meat and Meat Alternates, Fruits and Vegetables, Bread and Bread
Alternates, and Other).

The Commodity Recipe Exchange will be most
successful with user participation. Please share your popular recipes, menu ideas, and
serving suggestions with us, particularly for hard-to-use commodities. You can e-mail us
at fdd-psb@fns.usda.gov.
Depending on your response, as
many recipes as possible will be posted. We encourage and welcome your comments. Finally,
the recipes posted here have not been tested for yield or standardized by USDA.
